Coconut Berry Cake

I’m sorry this post is late.
Liam and I were up late wrapping gifts and I was so tired I had to go to bed.
Today I spent a harrowing hour & twenty at the dentist. (I fainted in April and broke my jaw in 2 places and am now in the middle of some epic dental work). 😥😥😥
After 4 needles, a clamped tooth and what seemed like endless drilling, I am utterly shattered. It’s so traumatic.
It’s Christmas in 2 days and with lots of family arriving, I won’t be posting until the new year.
For now, let me tell you about Mila’s cake.
It did taste good, BUT we are yet to master vegan, GF baking.
Vegan baking is ok, I’m pretty good at that. I could bake you something and you would love it.
Gluten free baking is also a synch. Easy and delicious.
Gluten free & vegan baking is a challenge! 😂
Mila added lemon essence to the vegan cream, and then covered it in fruit.
I won’t leave the recipe as this one is still a work in progress.
Although the consistency was a little like a gelled mousse, it was still eaten in full! 😂
Mila had so much fun baking and decorating her cake, and she’s learning a tonne from lots of cooking.

We’ve had a wonderful first term of home schooling. We can’t wait to see how we will grow and change as we move deeper and deeper into our year.
