Chickpea Masala

Sorry there aren’t more pictures…..I was too tired to get off the sofa to take them. 😴

I’ve said it before, but my husband is the king of curry! 🤴

When I got home from work the curry king was already busy in the kitchen and so I lay on the sofa & put my feet up & hung out with Linc.

We split the cooking pretty evenly but sometimes, I have to fight him to get into the kitchen.

Liam loves to cook and he’s really good at it.

You’ll love this curry.

Ingredients

1 red onion, finely diced

1 brown onion, finely diced

3 cloves of garlic, finely grated

1 inch of turmeric, finely grated

1 inch of ginger, finely grated

2-3 tbsp of Tikka Masala paste

1 can coconut cream

2 tins chickpeas, drained and rinsed

3-4 blocks of frozen spinach

1 tbsp fenugreek leaves

8-10 brown or cup mushrooms, quartered

1 tbsp honey

1 tbsp soy sauce

Dosa Bread

1 cup dosa flour (Can be found at an Indian grocer).

1 cup water

1 pinch salt

1/2 tbsp cornflour

Coconut Yoghurt & Cucumber Raita

1 1/2 cups of yoghurt

1 Lebanese cucumber, sliced thinly into quarters

1/2 tsp salt

1/2 lemon rind, finely grated

1tbsp olive oil

METHOD

In a medium pan, add 1/2 cup of water and when boiling add onion. Cook until translucent.

Add ginger, garlic & turmeric. Cook for 2-3 minutes.

Add the masala paste & 1/2 tbs of cornflour. Stir through and continue to cook for another minute.

While stirring, slowly add coconut cream.

Add the chickpeas, simmer for 10 minutes.

Add fenugreek leaves, spinach, soy sauce & honey. Cook for a further 5 minutes or so and then serve.

Coconut & Cucumber Raiter

Add the yoghurt, salt, lemon rind & olive oil to a bowl and mix with a spoon.

Add the chopped cucumber

If not serving right away, cover & keep in the fridge.

Dosa Bread

In a medium bowl, combine all ingredients and whisk until smooth.

In a small pan, heat a tsp of vegetable oil and pour a thin layer of mix. Make sure the pan is super-hot.

Flip when bubbles start to appear.

Cook for a further 10 seconds, not long at all, and put aside.

Continue to cook the batch of Dosa and then serve.

Serve the dosa on a place and heap the curry on top. Add a couple of good dollops of the cucumber raita.

Yum!!!
