Fried Rice

Homemade fried rice is quick & easy to make, and if you have left over cooked rice in the fridge it works even better because the rice soaks up the sauce that much better. 😋

Ingredients

1 1/2 cups of rice, cooked in rice cooker

1 tbsp sesame oil

1 onion, diced

1 carrot, diced

1 small head of broccoli, finely chopped

1/2 a head of cauliflower, finely chopped

1 ear of fresh corn

1 handful of frozen peas

Sauce

1/4 cup soy sauce

1 inch fresh ginger

3 cloves garlic, finely grated

1 tbsp sesame oil

1 flat tbsp corn flour

1 stock cube

1 tbsp oyster sauce

1 tbsp honey

1 tsp rice wine vinegar

1 cup water

Method

On high heat, add sesame oil to a pan and flash fry the veg for 5 minutes or so, and then set aside.

In a medium sized bowl, add all the sauce ingredients and whisk well.

Place a new pan on medium heat, add sauce mixture and cook until sauce thickens, then add vegetables.

Cook for a further 2 minutes, and then stir through cooked rice (or noodles).

Serve in bowls & top with coriander & a wedge of fresh lemon.

If we have it, we also top with chopped spring onion, toasted sesame seeds or cashews.

The timing was perfect as we have just decided to homeschool our children as a lifestyle choice and I thought…Cool! A daily blog will be perfect!
