Veggie Burger + Fries

Makes approximately 5 or 6 burgers

Made on lightly toasted GF bread. Buns obviously work well too, we just didn’t have any. Oh, & I like to drown mine in sweet chili sauce but just add whatever you like.

Lincoln chose today’s recipe. Still on his quest to recreate McDonalds French Fries at home, he gave it another shot and made delicious gluten free, vegan, veggie burgers at the same time. So good!!! ๐Ÿ˜๐Ÿ˜

Now, before you roll your eyes at me, listen up. This recipe is loved by carnivores!

Try it at home for meatless Monday, or you may have a vegetarian or vegan friend you’d like to feed. You can dazzle them with these beauties!

On my burger I add vegan aioli, hemp seed, the patty, sweet chili sauce, cucumber, grated carrot, avocado & whatever green leaves we have in the fridge.

Ingredients

1/2 carrot (50g) – grated.

1 small stalk celery (50g) – grated.

1 medium onion – grated.

1 clove garlic – grated.

3 mushrooms (optional) – grated.

1 1/2 tsp salt.

2 cups of cooking oats.

1/2 cup rice flour OR whole wheat flour if you’re not GF.

1tspn dried Italian herbs.

Freshly cracked black pepper.

500g of black beans.

1tspn GF soy sauce.

Salad to dress.

Method

In a medium sized bowl, grate the carrot, celery, onion, garlic & mushrooms.

Add salt, stir well & set aside.

In a new bowl, add the quick oats, rice flour, Italian herbs & pepper. Mix well.

Add the black beans (drained but not rinsed), to the carrot mixture from earlier & 1tspn of soy sauce.

Mash the beans through with a fork and stir mixture well. Be careful not to over mash the beans.

Combine the wet & the dry ingredients. The mixture should be quite stiff. This ensures you won’t have a mushy burger, but if you feel your mixture is too dry you can add a little water.

Cover mixture and let sit for 4 hours in the fridge. We usually make this mix the day before and leave it overnight, but this is up to you.

Leaving the mixture to rest in the fridge is important to develop flavour and allow the oats and flour time to soak up the liquid making them cook firmer in the pan.

Make them as big or as fat as you like by shaping them in your hands.

Next, heat 2 tbsp of oil in a pan on medium heat.

Add the burger patties and sear for just over a minute on each side.

Both sides should be golden brown.

Reduce the heat to the lowest setting, cover with a lid and cook for a further15 min on each side.

This allows for the oats & flour to cook through.

You want to cook them low & slow.

You can check them every few minutes or so by turning them to ensure they’re not burning.

When they’re cooked add your salad & sauces and serve!

French Fries

Ingredients

Lots of purple potatoes.

Peanut oil or other high smoke point oil.

Salt.

Seasoning of your choice.

Method

If you want McDonalds style fries, peal your potatoes first and then cut them into long, skinny strips.

Wash the potatoes & dry them well. Moisture is the enemy to a crispy French fry! ๐ŸŸ

Heat the oil in a deep pot and fry the potato strips for a couple of minutes.

Take them out, drain them on paper towel and leave them to rest in the fridge for 20 minutes.

Now the starch has been released you can fry them a second time on high heat until golden brown.

Drain on paper towel and add salt immediately to coat the fries.

Enjoy!!
